Healthy Veggie Nachos!

I’m admittedly a nacho addict, but I try to limit my nacho intake to once a week. I also make them more nutritious by topping them with steamed veggies. I used cheese on these, but you can make these vegan by using dairy-free cheese. My favorite brand is Daiya – it melts like real cheese! I also frequently use Toffuti dairy-free sour cream. I think it tastes even better than regular sour cream.

To make this recipe, try:
*8-10 white corn chips
*1/4 c shredded cheese of your choice
*a generous portion of chopped steamed veggies ( I used broccoli, carrots, cauliflower)
*fresh summer tomatoes (these were from a friend’s garden!)
*optional: sprinkle with cumin for that authentic Mexican flavor and to aid digestion

Top with jalapeños, fresh salsa, sour cream, etc.
