Quick and healthy gluten-free lunch idea

Today for lunch I had a bowl of brown rice mixed with a can of diced tomatoes (Rotel brand, mild). I used the ready-made rice from Trader Joe’s and tossed in some chopped parsley I had in the fridge. It would have been better if I’d had cilantro instead, so I’ll try that next time. I added a sprinkle of cumin for digestion and it was a tasty simple meal that kept me feeling full and balanced for the rest of my day.

Easy meals like these can be a life saver when you have to rush out the door for work and don’t have time to prepare anything the night before!
