Gluten free pancakes made with teff flour

These are delicious.  As in “OMG-put-all-the-pancakes-in-my-mouth-now!” delicious. I had no idea they would be so addicting.

I realize they didn’t turn out so pretty, but that has nothing to do with the ingredients and everything to do with my inability to properly flip a pancake. 🙂

Without further ado, here is the recipe:

2 cups teff flour (no need to sift)
1 tbsp baking powder
1 tbsp maca root powder (maca is good for hormone balance and your libido!)
1/2 tsp salt
2tsp melted coconut oil (I used Dr. Bronner’s organic whole kernel oil)
2 1/4 cups apple juice
1 tbsp vanilla

Technically you are supposed to mix the dry ingredients first and then add the wet, but I was in a hurry and tossed them all in together and mixed thoroughly.

Fry in coconut oil.  Makes 15 pancakes.

As a side note, I use coconut oil for everything.  Coconut oil consists of medium chain triglycerides (MCT) which flush other fats out of your body.  It’s easily digested and absorbed and increases your body’s metabolic rate. Do some research, you’ll be impressed.  I probably eat at least 2-3 tbsp every day and while it may sound counter-intuitive, it really does help me stay trim.

I was going to serve these with maple or date syrup but they are so tasty they don’t even need a topping!  I think they will make a great take along snack too for work, hikes, etc. Hope you enjoy them as much as I do!
